can jam september round up: stone fruit

i really just have to do this...just so you know.

as i've been sitting at my computer reading and rounding-up throughout the week i have been singing this pretty much non-stop.

i mean all these sweet and juicy peaches and nectarines!

can you blame me?

and it's not like i'd kick any plump little plums out of my kitchen either.

i love that it's all local! maple syrup, peaches, chiles...wow! (ever think about growing your own citrus?) :)

a straight up nectarine jam with a spot of pectin for good measure. i do agree, nectarines have there own special charm.

i am completely intrigued. i have never heard of tonka beans, but the way you describe their flavor makes me want to find a source, pronto! and peeps, you gotta check out this too!

yes those look like romas to me. (i have a roma tree but it doesn't produce anymore). ok, so about those hard skins, cook the plums until the skins soften (10 min. or so) and then add the sugar. it helps immensely.

can you believe it's almost october? i can't. we've been canning together for almost a full year! all of us on all these blogs and a lot of people at home!

there's a bunch of great photos up on tigress' can jam group on flickr which you should definitely check out and please note this exciting update: i've just opened up this flickr group to everyone. that means you! so please, calling all canners, show us what ya got!

kaela from local kitchen is our chooser for october and she has until this friday at midnight to tell you all about it. (i am very excited about this one!) can jammers, you must post your recipes between sunday october 17th and friday october 22nd for inclusion in the round-up.

now go out and rake some leaves or something! (and put 'em in your garden while you're at it, they're good for it!)

    Um, that video got the first hearty laugh of the day. And, apparently, a quizzical look from my neighbor, The VillageHeartThrob.

    Super-excited to dig in to all the awesome stone fruit-ness in, yet, another bountiful roundup. I just hope to not find any peaches at the market today. Cause, really, it's a joke to try to get them in a jar.

The peaches that Wine Book Girl and I canned were Elbertas from Masumoto Farms peach tree adoption program: a friend of a friend organized a group to adopt a tree and when I was asked if I wanted to join I jumped on it. http://www.masumoto.com/public/adoption.htm The thing about Elbertas is that the entire tree ripens over a period of about 10 days and, once ripe, the peaches have a shelf life of only a day or two before going moldy. So, they are perfect peaches for preserving. It also means that they are not a good commercial peach since they are so delicate, hence the peach tree adoption program. The day before out canning extravaganza I went to the farm in Fresno and picked peaches. The Masumoto family showed us how to size, the proper way to pack, and did a peach performance.

    In addition to the blackberry peach jam we also canned traditional peach jam, peach bbq sauce, and oven-baked peach relish. We have become fond of canning recipes that start with cooking in the oven - discovered last year during cranberry canning - since it frees up limited stove space or, more accurately, allows us to try out one more recipe even when the stove is already full of pots.

  5. Another good month Tigress. I just got a copy of Rachel Saunders' Blue Chair Jam Cookbook. Have you seen it? She's a Bay Area phenom, kinda retro but all there on the fruit front. I'm astonished at the heft of the book, but it's chock full of interesting ideas, techniques etc. Not a whisper (so far) of water bath canning since she relies on the jars to do it for themselves. (She sells her jams at farmers markets and specialty stores I assume so she knows her craft.) I'd try lots of recipes from the collection but they'd go into my canner pronto.

  12. I just discovered your blog. I actaully canned peaches last month and was THRILLED with a recipe I made up. It's peach lime jam, totally delicious. I also made Martha Stewart's rosemary peach jam while I was at it (we went to a peach and apple orchard and loaded up). Come check out my recipe...
