these little flavor-bombs are clearly the jewels of the jar.
a lot of great recipes here, basics that a just starting jammer can barely go wrong with, and studies on pectin content, cooking time, and flavor-combos. what a great month!
if you haven't jammed yet but you're following along, i encourage you to source some berries close to home and give it a go with one of the great recipes below. you'll thank me (us) in december or february when you bust out a jar of your homemade jam and remember what summer tastes like.

ReplyDeleteAnother great round-up ! I made gooseberry apple jam that I posted on Flickr. It is so good. I do believe gooseberries are a fave of mine. My other choice was Orangeberry Jam - blueberry, raspberry and orange zest - very good, but the Gooseberries draw me in every time !

Cherry Meyer Lemon Preserves? Sounds fabulous! As always, I couldn't wait for the round up and you didn't disappoint Tigress for the round up and the canners with all the great recipes - now I can't wait to try them. I really must work on my patience!
ReplyDeleteMy favorite jam in June has to be strawberry rhubarb. It isn't always possible in these parts to limp rhubarb all the way to strawberry season, but this year was an especial success in that not only did that happen, I was also able to get everything processed the very same day. I've never had such pectin-y rhubarb (it set like a champ!).
ReplyDeleteBut yeah, I stuck with the time-tested equal volumes of strawberry and rhubarb (diced with the slicing side of a food processor disk, without the blades in the bottom), macerated with half the total fruit volume of sugar for a few hours and add up to the same amount of sugar when jamming. Oh, and for one batch I added a bit of Meyer lemon juice. Most wonderful!
I've been following along silently since the beginning and wanted to share that this month I tried something different although strawberry rhubarb jam is my all time favorite. I made Banberry Jam - bananas and strawberries. The color is beautiful and the taste is out of this world. I'm low tech - no blog, no flickr account but following along just the same.

ReplyDelete@Elle Ross: I think it depends on how much you use (or how concentrated the pectin stock is). It might dilute the real star quality of your "star" fruit (not starfruit!) but it won't make it taste like apples.

ReplyDeleteSlow to add my comment this time around as I've been away from technology for the past several days (although my pictures were posted last week). I made cranberry ketchup - not, perhaps, the "erries" that Joel had in mind but they've been sitting in my freezer since I scored about 30 cups of them last year and this was the perfect excuse to do something with them. And it's delicious :)
ReplyDeleteWell, I no longer have a blog, but am in the midst of chinoising (not a word. I know) my marionberries to make marionberry seedless jam. The juice will sit over night, I'll skim the foam and process tomorrow. Meanwhile it's sweet cherry/lemon marmalade.
